Recipe for May 3: Boar’s Head madrasala curry chicken salad

The Morning Menu

3 pounds of Boar’s Head Madrasala Curry Chicken, diced
3 cups of spring mix
½ of a cup of celery, chopped
½ of a cup of red onion, chopped
½ of a cup of dried apricot, chopped
½ of a cup of dates, chopped
1 tablespoon of cilantro, finely chopped
1 teaspoon of lemon juice
Pinch of black pepper

Combine all ingredients and serve on bead of spring mix.  Top with dressing of choice and serve.
