Collard Greens Wontons
1 ham hock
1 yellow onion, quartered
4 cloves of garlic
1 small bunch of collards
8 ounces of cream cheese
Red Pepper Flakes
In a large pot, place ham hocks and 1 onion and cook until tender. Remove the hocks from the pot and reserve the stock. Shred the meat from the bones and reserve.
Remove the thick stems from the collards and wash thoroughly. Cut into 1/2 inch ribbons. Place the collards into the reserved hock stock and bring to a boil. Add 1 cup of orange juice and 1/4 of a cup of brown sugar. Reduce to a simmer and cook for about 1 hour or until tender. Season with salt, pepper and red pepper flakes.
Remove collards with a slotted spoon and combine them with cream cheese and ham hocks.
Place a small amount in the center of the wonton and fold it into a triangle. Seal the edges of the wonton with water. Then fry them at 350 degrees until golden brown and delicious.
