Good Day Cafe: Apple clafouti and apple doughnuts

The Morning Menu

Apple clafouti
Serves 6-8

Batter ingredients:
4 eggs
1 cup of milk or half and half
4 tablespoons of butter, melted
1 tablespoon of butter, not melted
1 teaspoon of vanilla extract
2/3 of a cup of all-purpose flour
1/2 of a cup of sugar
1/2 of a teaspoon of salt

Preheat the oven to 400 degrees F. Put all of the ingredients in a blender and blend until smooth. Set aside. Place 1 tablespoon of butter in a 10 inch pie plate and melt in the oven, greasing the sides of the plate. 

Apple mixture ingredients:
3 tablespoons of unsalted butter
4 tart apples (like Granny Smith), peeled, cored, and sliced
1/2 of a cup and 1 teaspoon of sugar
3 tablespoons of rum flavoring (or a combination of your favorite flavors or fruit flavored brandy)
Ground cinnamon

Melt the butter in a large skillet over medium-high heat. Add the apples, 1/2 of a cup of sugar and rum flavoring and cook until crisp/tender and glazed over.

Pour half of the batter into the hot pie plate with melted butter. Arrange the warm apple slices over the batter and reserve the juices. Then pour the remaining batter over the apples. Sprinkle 1 teaspoon of sugar and a little cinnamon over the batter. Bake for 25-30 minutes or until it is golden brown and set in the center. Drizzle with warm reserved apple juices and ice cream.

Apple Doughnuts
Serves 3-4

Ingredients:
6 medium apples (Stayman, Granny Smith, Delicious, Fugi)
3 cups of flour
1 tablespoon of baking powder
1 tablespoon of salt
6 eggs
1 and 1/4 cups of milk
2 tablespoons of almond, vanilla and maple flavorings
1 tablespoon of salad oil
Cooking oil
Powered sugar

Wash the apples, core, and slice them into 1/4 inch slices. Dry each side of the apple slices on paper towels. Combine the flour and next six ingredients in a bowl. Heat about 1/4″ of cooking oil in a non-stick skillet over medium heat. Dip the apple slice in the batter on both sides and then lay in the hot oil in the skillet. Repeat with as many apple slices that can fit in the skillet. Cook until golden on one side and the flip and cook on the other side. Drain the slices on paper towels. Dust heavily with powdered sugar. Add more oil as needed as you cook the slices. Leftovers can be refrigerated and reheated in microwave.
